Mote Pillo

Ingredients
1 pound of cooked GRANANDINO´s mote
2 tablespoons of butter or lard
1 cup finely chopped white onion
2 garlic cloves, minced
4 eggs
1/4 teaspoon of achiote
1/4 cup of milk
1 tablespoon finely chopped cilantro or parsley
Salt to taste
How to prepare?
- Soak the mote from the night before and boil until it bursts.
- Heat the butter or lard in a skillet.
- add white onion, garlic, achiote and salt, cook until onion is soft, about 5 min.
- Add the mote, mix well and cook for 2 minutes.
- Add the milk and cook until the milk is almost completely absorbed by the mote.
- Beat the eggs lightly and add them to the mote, mix well and cook for approximately 5 minutes.
- Add the coriander and serve.
