Barley Rice Soup
Aprox. 20 - 30 minutes
Plate for 1-2 persons aprox
Ingredients
1/2 pound GRANANDINO barley rice
1 pound rib or pork cut into chunks
2 pounds of small peeled potatoes
4 garlic cloves, minced
1 white onion finely chopped
4 tablespoons of oil
1 teaspoon finely chopped coriander
1/2 teaspoon cumin
2 cabbage leaves cut into small cubes
3 tablespoons of salt
How to prepare?
- Boil seven cups of water.
- Season the pork with salt and cumin.
- Fry in the oil until golden, then add the garlic and onion.
- Keep a moment longer on the fire and add the boiling water.
- When the meat is perfectly cooked with the water and has turned into a broth, add the barley rice, let it boil for about five minutes and immediately add the cabbage.
- Let all the ingredients cook for ten minutes and add the potatoes, until they are soft.
- Finally, add the coriander and if necessary increase salt and cumin. Serve hot.
