Red Beans Soup
Aprox. 25 - 30 minutes
Plate for 2-4 persons aprox
Ingredients
1/2 kilo of GRANANDINO red beans
1 red pepper
1 tomato
1 or 2 chicken eggs per person
1/4 kilo of dry grated cheese
1/4 kilo of pork crackling
Salt, black pepper and vinegar to taste
How to prepare?
- Boil ½ kilo of red beans in enough water with only a whole head of garlic chopped to make it easier to throw it away and add salt.
- While the beans are cooking, chop the onion, sweet pepper, tomato and two cloves of garlic and fry with a little margarine and olive oil.
- Blend one or two cups of cooked beans.
- When the beans are soft add the fried (onion, pepper, tomato and garlic) the pork rinds and wait for them to get a soft texture.
- Once the beans are cooked, add all the ingredients and let it thicken.
- Check the salt and black pepper to taste, add the blended beans and stir the soup to thicken.
- Two minutes before turning it off carefully add the chicken eggs.
